Assessment of physico-chemical properties of antioxidant rich fruits and sensory attributes of jamun based RTS beverages

In present investigation, efforts have been made to assess physico-chemical properties of jamun and lemon fruit prepare antioxidant rich ready-to-serve (RTS) beverages from juice blends. The physical like color shape was blackish purple ovoid or round in shape. average length, breadth weight were 3.16 cm, 2.17 cm 10.7g respectively while pulp weight, seed inedible waste content 7.45, 2.46, 0.79 2.31g overall weight. calculated value edible index 69.63 30.37%, yield 21.67% the total Physical light yellow mean 4.1cm, 3.8 23.0 g, respectively. pulp, seed, peel 8.71, 0.58, 13.72 7.67 37.85 62.15% whereas 33.35% experiment comprised six treatments including one control five blended RTS beverages. Among different ratios (100:0, 99:1, 98:2, 97:3, 96:4 95:5) for preparation beverages, ratio 97:3 reached highest sensory scores acceptability.
